My work has been focused on submerged fermentation of fungal mycelia on waste stream products. The goal was to produce prototype of sustainable meat like product with high nutritional value.

I have been wondering for a long time what vegans eat. I thought that I could never do that. I loved butter and cheese so much. But I've tried. Slowly, step by step. I started with oat milk for my coffee, later with hummus instead of butter, and soy yogurt for breakfast. At that time, I have been offered to do an Internship at the research group of Plant-based food biochemistry at the Copenhagen university. And the journey started to be more exciting! I've got closer to topics like the functionality and digestibility of plant proteins. Solubility and gellation, nitrogen content and aminoacid composition. I had the opportunity to work with raw materials like soy and pea protein isolates, chickpea, or mushroom mycelia. I've gained laboratory skills, and now I feel even more comfortable with talking about veganism, future food, the nutritional value of food, and sustainability.

The extraordinary and unique Tokaj region gave me an amazing background in traditional methods of winemaking. Noble mold Botrytis cinerea person has the best conditions in this area where it helps to create special grapes called cibebs (lat. zibbeba - naturally sweet grape). The soil of the region has a volcanic character, and wines produced here are naturally sweet dessert wines, some of them with more than 160g/L of residual sugar—the perfect place for first job experience. I have gained skills in harvesting, fermentation, agriculture, history, product placement, marketing, customer communication, and sales.
