Oakland Yacht Club, founded in 1913, is a Member owned private-equity Club with a 220 slip marina. I was recruited for my strong leadership skills, Food and Beverage expertise, Membership recruitment and retention skills as well as superior financial abilities. Achievements and Accomplishments:• Membership & Member Relations: Increased Membership by 10% by taking an active roll in recruitment and retention by personally knowing all 240 Members which cut attrition by over 50%. • Food and Beverage: Working with the existing Food and Beverage staff increased À la carte 12% by improving food quality, timing and presentation from the back of the house and by training the front of the house on the three steps of service and proper serving techniques. Revitalized catering by updating menus and pricing, collateral materials and improving the Club's website. • Board of Directors & Committees: Work with the Executive Committee to prepare for Board meetings where I report on the Club's finances, membership, clubhouse and harbor. Personally attend every Committee meeting so I am aware of their particular issues while imparting how they may impact the Club. • Stewardship: Developed the annual operating and capital budgets, and the 20 year reserve study. Dana Point Yacht Club, founded in 1962 is a Member owned private-equity Club. After spending several years without a General Manager due to budget constraints, I was interviewed for a consulting position. Due to my extensive Club background, experience in F & B, Membership sales and retention, private event sales management and accounting background, I was offered the General Manager position, providing all those functions.• Membership: Positive net Members every month by providing proven marketing strategies as well as being actively involved in recruitment of new Members. Personally contact every Member who resigns to attempt to retain them. Started an At Risk Member retention program to identify and contact to get them back involved in the Club. Total membership count has risen by 14% in since my arrival.• Profitability: Generated a net operating profit every month by monitoring payroll, reviewing and approving all expenses while driving top line sales through both ala carte and catering revenue.• Working with the Club’s Committees we have added successful new events such as; 4th of July Dock Party, SummerFest, Lady’s Fashion Show, and Casino Night.• Stewardship: Developed first budget Club has had in 5 year. Brought A/R under control by personally making collection calls.
Center Club, founded in 1985, is Orange County’s premiere Business Club. Over 1,000 Members enjoy the benefits of a 100-seat fine dining restaurant, a 20-seat casual bar, and catering facilities accommodating between 20 and 350. Renowned as one of the premiere Clubs in the ClubCorp family, the facility is the most widely utilized Club by our national Members. Gross dollar volume is $5.5 million dollars with $2.5 million dollars in food and beverage sales. Club currently has 75 employee partners. Achievements and Accomplishments:• Membership: Developed marketing and programming strategies to continue to attract top civic, business and social leaders even in tough economy. Created a Young Executive Board designed to introduce the next generation to the Club. • Member Experience: Worked with the Chef and F & B Director to ensure 5 Star quality and service are delivered while reducing COGS and Labor %. Introduced new dining concepts such as monthly Member values, supper club events, nightly happy hour and half-priced wine nights.• Member Retention: Pioneered Member retention strategies designed to give options to our Members who are struggling financially while protecting our long-term dues and fee structures.• Visibility: Attend all Board, Committee and Club meetings and events, host weekly cigar & cocktail parties with the GM and walk the dining room at every meal period to ensure Member’s expectations are always being exceeded. Take a hands-on approach with Members, guests, staff and community.• Stewardship: Responsible for financial reports, budgeting, capital plan and the long-range plan.• Construction: Working with the Board, executed over $1 million in Club improvements including new casual bar, restrooms, electrical rewiring, and interior remodel. The Beach Club is the family facility of this top ranked 3,500+ Member private-equity Club. F & B facilities include a 120-seat fine dining restaurant, indoor catering accommodating between 20 and 350, outdoors accommodating over 1,000, a full service bar and a snack bar. Athletic facilities include a state of the art health club, locker rooms and full fitness programming. Paddle-tennis, beach volleyball courts and an Olympic sized indoor swimming pool complete the property. Gross dollar volume is $18.5 million dollars with $5.3 million dollars in food and beverage sales. Club had 375 employees. Achievements and Accomplishments:• Oversaw the demolition, construction and decoration of the ladies and gentlemen’s locker rooms. The total budget was $3 million and the project was completed within the budget and time parameters. Renovated and redesigned the dining room and bar in 5 days and on budget.• Primary objectives were to get payroll and other expenses in line and increase Member and guest satisfaction by improving the quality of all Club products, services, programs, and events. Upgraded menus, food quality and service in the dining room, which increased revenue 8.6%.• Hosted over 80 special events annually that ranged from Clambakes, Cinco de Mayo, Holiday Brunches for 1,400 members and guests, Concerts on the Beach, Winemaker Dinners, Celebrity Chef Dinners, Kids Movie Night, Father and Son Campouts to Designer Fashion Shows.
• Upon the termination of the Club’s GM assisted the Interim GM and the Club’s elected Treasurer to control labor and expenses to turn a $500,000 prior year loss into a $600,000 profit.• Refinanced the Club’s debt saving the Club nearly $600,000 over the ten year life of the loans. Managed all the Club’s cash and credit lines, and invested the $2 million disaster fund.• Conducted a feasibility study on the financial impact of converting two floors of old hotel rooms into luxury suites at the downtown facility. Made numerous presentations to the sub-committee and board on this study. Once decision was made I also secured a $6.8 million construction loan, which was converted at a fixed rate less than prime.
Reporting to the CEO, was directly responsible for all accounting / financial and human resource functions while establishing consistent and appropriate business practices.
Responsible for the concept, development, business plan, financing arrangement, site selection, lease negotiations and operation of this $2 million family restaurant and entertainment center.
