I began my business life as a qualified chef, I trained to the MCFA level and also became an NVQ Level 2 assessor/instructor, I worked my way across Europe and then returned to Ireland in 1996/97 when my father passed away.Over time I progressed my skillset and moved into management levels and tried my hand at a range of different disciplines.From 2000-2024 I dealt with marketing, HR, Payroll, IT, PR, business development, contracts, legal negotiations and so forth - amongst other items for Fox's Ltd. (A top-notch successful local family business with an international reputation). In 2024 I moved off the mountain and on to the Killruddery Estate - a stunning property set in over 800 acres with a range of diverse activities and dining outlets to suit all.The focus here is quality, sustainability and diversity - recycling is always on the agenda.Growing our own produce for the most honest farm to fork dishes and raising our own livestock to have trust in every meal is a key factor.
