When I moved back to Côte d’Ivoire, I realized that most available cereal-based flours, were naturally gluten-free! I started to create recipes, and leveraging my chemical process engineer background, I experimented with flours, observing their water-absorption capacity, their texture, their taste, and the way they reacted with other ingredients. I started to create recipes, and leveraging my chemical process engineer background, I experimented with flours, observing their water-absorption capacity, their texture, their taste, and the way they reacted with other ingredients. I snack a lot, and while taste is very important, I needed a low-calorie, gluten free option, which I could not find. ... and that's how SOST was born! We turn cashew nuts into flour, which we turn into delicious and healthy snacks. SOST means "3" in Amharic, a language in Ethiopia, because my team and I focus on 3 elements – the body, the mind, and the soul. Good fuel for the body and mind, and a tasty touch for the soul!
