The Food of Animal Origin Hygiene Service is an advanced division which operates within the Department of Veterinary Prevention.The Service deals with the safety and hygiene safeguard of food of animal origin and its derivatives: meat, milk, fish, eggs, honey etc., during the stages of production, processing, conservation, transportation, storage, wholesale distribution and retail sale.The services provided by means of official control are the following:• Inspections and surveillance in approved and registered facilities for the production, processing, conservation, transportation and marketing of food of animal origin and its derivatives;• Inspections and surveillance in collective catering (canteens) for public entities and private companies.• Epidemiological surveillance and related epidemiological investigations, following clinical notifications of toxin-infections derived from food of animal origin;• Management of national and international food alerts, and monitoring of food traceability and trackability;• Sampling plans for the research of residues of contaminants and pathogens in in food of animal origin;• Monitoring of import-export and intra-Union trade of food of animal origin.

The IAPZ Veterinary Service (Hygiene of Breeding and Livestock Production) deals with multiple subjects aimed primarily at the protection of human health through the control of the healthiness of food produced by animals, of the structures used for breeding, of the use of the drug in animal husbandry and animal nutrition; it is an active part in training and information aimed at citizens, public bodies, associations and operators in the food sector. It carries out the issue of opinions, including authorizations, in the field of economic activities with animals, live animal transport, projects, events with animals, veterinary facilities, drug sales, circuses, etc. It actively collaborates with the police, councilors and the environtment competent authorities also in the field of supervision of possible environmental contamination. The fundamental mission of the IAPZ Service is the protection of the welfare of livestock and pets and the correct human-animal relationship, also in response to citizens' reports.
