I return to my community through my volunteer service here, and have served as President of Ocala and Daytona Beach Chapters, State Board of Directors and Local Central Florida Board. As Chairman of Special events, I have produced food and beverage for Disney's Suprise Party in the Park at Lake Eola and many other events with attendance to 50,000 per day, raising $70 to $100K for local food service education programs.

Total responsibility for the successful operation of three high volume IHOP Restaurants on A1A Beach Highway and for Barnacle's Steaks And Seafood.

Total responsibility for successful operation of 8 to 15 Subway Restaurants with weekly unit volumes to $15K. Responsible for start up of new locations and for testing of first POS system in our company area wide for testing and establishing needs for our 45 restaurants as well as corporate stores.

Totally redeveloped the food and retail operations for the theme park and hotel interests of this company, which included Florida Silver Springs, Wild Waters, Weeki Wachee Springs, Buccaneer Bay, and Holiday Inn Weeki Wachee. Created food service and talent feeding for new concert program, created catering department and facilities for all properties, increased national brand marketing partner sponsorships. Reduced costs by 10% overall and increased per capita guest spending by 25% through effective menu, presentation and service of products.

Moved key accounts with me and developed Orlando contract sales office for this national catalog restaurant equipment company. Developed computer pricing system as tool for sales estimating and management. Clients included Jeno Paulucci’s Pasta Lovers Franchise System, developing this with chef and franchise marketing team through the initial six units. Other clients included Universal Studios Florida, HJ High Construction Company, and Florida’s Silver Springs.

Developed key accounts such as Pasta Lovers Restaurants nationally and, locally Scotto Pizza and Manchu Wok. This business failed due to failure to pay of company’s largest client forcing me to take my clients elsewhere.

I was first recruited by this international restaurant equipment company which is more fully described above. Earned Restaurant Hospitality Magazine Excellence in Kitchen Design Award. Clients included Robert Earl’s Orlando Entertains dinner theater attractions,, Sea World of Texas, Red Lobster, Boardwalk and Baseball.

Retained from inception through two ownership changes, I designed the park layout for food service and all facilities, specified and purchased equipment, supervised construction, developed all hiring training and other programs to open the world's largest water park. Operated through the first season for Six Flags until permanent management was transferred from seasonal parks.

Worked all positions from patio busboy to Department Head of Food Service at Florida Festival in Orlando.
