Beverage Manager
CurrentTaking ownership of the beverage programme at Treehouse Manchester, my role includes:- Overseeing the daily bar operations of 5 venues within the hotel, including restaurant, cocktail bar, and banqueting spaces. - Planning and execution of pre-opening operations, including bar setup, supplier selection, development of SOPs, hiring, development of immersion training, inventory and supply chain processes, and cross-team collaboration. - Directing three cocktail programmes, development of technique-driven, seasonal menus in synergy with the food programme.- Monitoring stock control, COG/GP budgets, and revenue forecasts.- Management of supplier and distributor relationships, and negotiation of contracts, retro agreements and volume deals.- Championing sustainable practices behind the bar and minimising the environmental impact of the bar programme.- Developing an ongoing training programme for three bar teams.- Development and execution of a busy activation calendar.
