As head Chef at the Highland Coast Hotels, I help to oversee the kitchen and ensure service runs smoothly, no matter how many covers there are. In this role, my focus is on seafood and creating the best dishes possible using locally sourced, Scottish, ethical ingredients.

As Head Chef at Conifox, I was responsible for the hospitality outputs for the cafe, events space, bistro, kids play centre and launched their high end gastropub in 2022, The Fetching Fox. Within this role, my duties included: - Ensured the kitchen was managed efficiently and professionally, including the launch of their high-end gastropub, Fetching Fox, featured in Edinburgh Live and other media sources. The restaurant has received consistently good reviews since the day it opened and I was fully responsible for the menu. - Leading each kitchen function within the Conifox business and strived to achieve the highest standards of food production in each section- Worked with an agreed budget and had responsibility for the efficient running of all food functions of the business and always worked hard to improve profitability, quality of food,staff development and retention.

The Raeburn is an exquisite, luxury boutique hotel in Stockbridge, Edinburgh. As Senior Sous, I assisted the Head Chef with all preparation and planning of meal designs and ensures all services ran smoothly.
