This role draws upon my wide range of skills and experiences. It's purchasing with a twist that involves reporting to the General Manager, working closely with the Maintenance Manager, Food & Beverage Managers, Operations Manager and Special Events Creative Director while implementating best practice purchasing systems. Core tasks include liaising with suppliers, product and service research, cost analysis and procurement of equipment that spans building materials, kitchen food production equipment and sourcing specialist items necessary for the theme park and special events including coordinating manufacture of often unusual custom made items. My skills as a banquet chef, food & beverage coordinator, chief steward and engineering purchasing officer all merge to source goods and deliver imaginative outcomes and solutions in this unique environment.

Responsible for the resort's engineering department purchasing,maintaining an inventory stock-holding, developing and maintaining positive relationships with suppliers; quoting, ordering and receiving; monthly stock take and reporting; extensive use of Microsoft Excel, Check SCM and Mex.

Hyatt Regency Coolum

Manager responsible for purchasing for all Hyatt resort divisions (except Engineering) reporting directly to the Director of Finance. Food & Beverage purchasing was a major component of this purchasing. This role involved close liaison with executive chef, restaurant chefs, director of food and beverage, restaurant and departmental managers and wide range suppliers (local, regional and national).

Responsible for purchasing for all Hyatt resort divisions (except Engineering). Food & Beverage purchasing was a major component of this purchasing. This role involved close liaison with executive chef, restaurant chefs, director of food and beverage, restaurant managers and wide range suppliers (local, regional and national). Purchasing for special events including CHOGM and Australian PGA.

Sunshine Coast

Territory Sales Manager position covering hospitality, aged care and cleaning companies across the Sunshine Coast, Cooloola Coast and Burnett regions. Responsible for commercial dishwasher service and maintenance plus chemical usage monitoring.

Responsible for back-of-house cleaning and hygiene of Hyatt restaurants and bars including chemical management, OH&S and purchasing of food and beverage equipment, crockery, cutlery, glassware. Rostering and managing up to 40 team members. Included secondment to pre-opening team for Hyatt Regency Fukuoka, Japan.During this period I was also privately engaged to conduct back-of-house consulting for Penrith Leagues Club (NSW) and Couran Cove Resort (Qld), provide report and recommendations.
