As "High Priestess" to the VP/Head Distiller ("Empress") of Three Floyds Brewing, I was hired to come in and provide organizational and creative advisement to help open their distillery, designing and implementing the critical path method to ensure that we were on schedule. This entailed working in collaboration with the board, legal, financial and industrial team leaders to ensure the bar and tasting room was completed to specs, creating style guides and educational methods (training manuals/recipe books) for service, and helping define the brand identity through my creation and design of the menu and mythology behind it. I helped establish standards and training for management and staff. After we opened, my ongoing involvement included conceptualizing and executing events, advising the VP/head distiller, and continuing to educate and inspire the team.

As Spirit Guide, I created and ran one of the most successful bar programs in the Two Roads portfolio, Cindy's Rooftop of the Chicago Athletic Association Hotel. We were humbled to win awards, pushed boundaries in order to better our business practices and thus engage the guests, and maintained a convivial sense of hospitality and craft while being high-volume AF.

I was a part of the opening team of James Beard-award winning Violet Hour and spent 8 years at Chicago's "Hogwarts" of Booze Sorcery. Many of us have gone on to affect drinking culture across the country. I also learned about the balance of volume and sanity at Big Star, the game-changing "taco-stand" that is often emulated.
