• Directed and facilitated all opening facets of this 184-seat restaurant, including the hiring, on-going training and development of a staff of over 70+ FOH and BOH employees, writing operational procedures, service standards and employee manuals, as well as scheduling of staff, etc.• Exceeded $6 million in revenue our first year in operation, and continuously strived to lower our operational overhead and costs through constantly analyzing our processes and procedures to find new economies of scale, and efficiencies to be gained, while consistently delivering excellence in service to our guests. Utilized the expertise of our entire staff to find new, better, and more effective ways of operating by encouraging, championing, and enabling staff to contribute their insights into our operations.• Responsible for directing the nightly operations of the restaurant, to include managing a high-satisfaction guest experience, assuring consistent product quality and execution, oversight of all staff performances, as well as completing all nightly closing financial and operational reports, cash-handling and deposits.• Created an on-going incentive / training program for the service staff developed to increase their product knowledge, and to drive revenue. Conducted daily pre-shift meetings to reinforce our excellence in service standards and morale.• Worked directly with the EMM Group Events Team to plan, coordinate, and flawlessly execute countless high-value corporate, celebrity, and other special events of every scale to continuously drive revenue, and to utilize these events for building brand awareness and loyalty.
