After opening, the role included Food & Beverage Manager, with full operational.

Created one of Sydney's leading Deli, Cafe, and Catering operations. This grew to include a restaurant, and 2 of Sydney's eastern suburbs leading Cafes. Great coffee and food, in a cool environment was born.

Starting with responsibility for the pre-opening team, once opened, all aspects of food and beverage fell under my control. This included duty management, staff, budgets, promotions, menu designs and systems, for one of Sydneys leading 5 star hotels

Due to a unique pallet, and a deep understanding of wine, I introduced wines from a range of Australia's leading boutique wineries to the Queensland market. Hosting various tastings and promotional events, this led to really ensuring the brands chosen were successful with new markets.

Responsible all aspects of Food & Beverage. This included a project which re-launched two existing areas with fresh ideas, design and branding (4 outlets, Room Service, Catering, Functions). Also responsible for hotel Duty Managers

Responsible for 6 Food & Beverage outlets, Room Service, Activities Dept, Banquet Dept and the upgrade and re-branding of the property.

Responsible for all facets of Australia's first up market food court. Ensured staffing, systems, menus, concepts and budgets were set up efficiently, and to my specifications, in order to create an exciting and unique experience. Also responsible for 60's themed restaurant. The role included the involvement in an exciting spin on hosting various themed.
