I have been vegan since I was a child, before anyone around the planet actually knew what a vegan was. Initially, I didn’t eat the best and it’s taken some time to finally create what works for me to stay nutritionally healthy, fit and, most importantly, full. I love creating food as art and nutrition for myself and others. I especially like to eliminate as much packaged foods a possible and mostly stick with whole fresh foods, fruits, grains and such. When I have cravings, I treat myself by incorporating wholesome food sources into the food I crave. As an athlete and an active person, I want to stay lean, fit, healthy and full of natural energy. I have learned that if you creatively slice ’n’ dice your fruits & veggies, use flavors ’n’ spices, that you can really make some incredible savory & sweet flavors and have all your taste buds satisfied and delighted. When you add color, texture and a mixture of flavors, you can surprise most (even for those that haven’t “gone vegan”) by creating vegan dishes that are delectable, filling and healthy.
