Research & Development Chef
• Conduct benchtop development of ice creams, non-dairy frozen desserts, bases, variegates, and inclusions. • Translate all benchtop formulas into Commercial Formulas and Finished Good Specifications for various manufacturing partners or ingredient suppliers. • Organize tastings with Jeni and Brand/Marketing teams for approval of benchtop samples. • Work with Sourcing to identify potential ingredient suppliers and provide feedback and approval of all ingredients. • Actively participate in packaging design reviews, flavor copy reviews, and inform appropriate teams of product reformulations. • Support scoop shops with innovative menu items and work with the Food Safety team to create thorough SOP’s for new offerings. • Lead weekly new products meeting to inform various cross functional teams of new developments, product improvement projects, package changes, and production. • Draft new projects sheets to be signed by Brand/Marketing and obtain written approval for approved benchtop samples. • Manage timelines for R&D projects as they relate to new flavor launches, reformulations, etc. • Conduct consumer testing and competitive cuttings to stay alert with trends. • Participate in the on-boarding of new manufacturing partners and support all commercial runs of new products at existing manufacturing partners. • Support Jeni’s Production Kitchen with the scale-up of new items and troubleshoot issues with existing items in production. • Support Operations and Production Partners with formulation improvement projects based off feedback during commercial production.
