• Facilitate and guide 25-100 – student sections through fundamentals of basic nutrition.• Clarify and demonstrate use, and analysis of three-day food logs/recalls.• Initiate online discussions through presentation of current nutrition – related principles and controversies.• Manage class sections on Blackboard website, and provide tech support for student users.• Record and organize class grades and assignment submissions to tabulate students’ final grades.

• Conduct research on food security status of food bank users.• Tabulate and analyze data pools using PASW Statistics software.• Conceptualize statistical results of study, and relate to results of prior research.• Use Microsoft Excel and Powerpoint to present and discuss findings at professional research expos.• Compose manuscript for submission using current results and peer-reviewed articles.
