Project "Exploring the synergistic effects between protein-based carriers and active principles"Final project grade: 18/20.Alpha-tocopherol is a well-known potent antioxidant compound with other relevant bioactive effects. Zein, the prolamine of corn, has been long recognized for its film-forming properties. This ability makes it a good candidate for the development of encapsulation structures. Zein may also serve as an enterocoating agent and protect bioactive components from stomach acid.The aim of this work was to prepare different formulations of alpha-tocopherol with zein protein uing for this a Spray drying method and to characterize them in terms of solid state (thermal stability, particle size, morphology) and bioactivity (Franz cell-based assay, ORAC and evaluation of angiotensin-converting enzyme inhibitory activity)
