1. Conducts daily briefings for Stewarding department. 2. Directs and controls all subordinate kitchen staff to ensure that all day to day operational matters are handled on time and guest expectations are met. 3. Co-ordinates with Food and Beverage in ensuring that all banqueting and restaurant operations function efficiently and on time. 4. Assists in the preparation of duty rosters, vacation planning and scheduling, and public holiday scheduling. 5. Monitors the cleanliness and hygiene in all food & beverage areas to ensure that they conform to the requisite HACCP & DM standards. 6. Liaises with purchasing and suppliers to ensure that all products ordered are delivered, and are of the appropriate quality at the most competitive price. 7. Conducts periodic checks of all chemical delivery and storage areas to ensure standards of hygiene are maintained. 8. Implementation of pull sheets for all operating areas. 9. Supervises the set up of all buffets, tea/coffee breaks and food displays set ups in terms of buffets/breakdown stations/garbage disposal. 10. prepares accurate and up-to-date records. 11. Assists in maintaining standards of hygiene and cleanliness in all kitchen and related areas. 12. Assists in the controlling and monitoring of chemical expenses. 13. Hands on training of associates in daily operations pot washing / dishwashing / general hygiene practices. 14. Takes periodic inventory and par stock maintenance for all chinaware, glassware, silverware and hollowware. 15. Ensures up keep of all chinaware, glassware, silverware and hollowware.
