Food & Beverage Manager

Responsible for all the beverage operation aboard, for all public lounges activities, the wine service in the main dining room, specialty restaurants, al fresco buffets and all open decks services including shore side and in-house especial events, suites mini bar control, VIP guests and suites especial requests and especial parties exclusively for British guests.While focus on provide the highest level of service along with Saga standards in order to succeed the guest expectations and achieve company ratings highly grade on costumer satisfaction, generate on board revenue and retain the hotel and beverage cost within company budget and target levels.Perform the beverage manager duties in compliance with all safety, security and environmental requirementsSupport the F&B Director with all the operational requirements, consolidate the public health & hygiene standards on daily operation, and follow up consequently.Coaching and training the service staff as per company guidelines and managing the MLC 2006 requirements for all crew related matters providing a supportive and adequate environment among the crew members as part of Saga main values.Have the opportunity and great experience to front the opening team, being part of the inaugural cruise lead team and run the operation for the first brand new ship Spirit of Discovery from June 2019 to September 2019.

Revenue Manager on board.Responsible to maintain company standards and procedures, aiming to provide the high quality service and generating the utmost profits while operating in a regular paid seasons demonstrating a good salesmanship and practice strong beverage and hotel cost control trough all inclusive seasons.Overall responsibilities also involve determination and strategies for beverages packages sales, additional activities and incentive the staff increasing and achieving the bar revenue, enforce an appropriate training for service staff, scheduling and produce the required financial reports.Perform the beverage manager duties in compliance with all safety security and environmental requirements.Responsible to liaise with the Restaurant Manager the wine cellar and wine service operation.Responsible for controlling and support the F&B Director to comply with international public health standards and procedures.Managing and controlling the working/resting hours following MLC 2006 guidelines.

Assist the Beverage Manager in the supervision of the bar lounges and open decks. Ensure the bar designated areas are well covered with enough personnel and shift them accordingly with the operational demands effectively.Using a hands-on management approach to acts as a committed company host, helps and coordinate the bar team during the pick hours, different events and recovery the work force for the operational necessities.Participates on-the-job training process closely with the staff and guide them accordingly. Ensure the bar par-levels and all the equipment are maintain efficiently.Has adequate knowledge of international public health regulations and maintain it into the highest standards throughout the bar operation at all times.Generates positive ideas and methods helping to increase the bar revenue and improve the bar service and help to control the bar costs closely.Fully in charge of bar outlets inventories and assist the Beverage Manager in all the hotel operation requirements and demands.

Responsible to run the bar outlet assigned run smoothly and following the company standards and procedures.Responsible to follow up public health procedures and training all bar boys to use and apply it accordingly.Ensure general cleanliness and orderliness in all bars areas and bar pantries. Ensure proper handling, storing and serving of food in bars.The taking of physical inventories of the bar in charge each cruise.Orientate and training of new personnel together with assistant bar manager.Providing ongoing training to bar personnel followed by daily briefings to assure knowledge of bar offerings and proper service together with assistant bar manager.Reporting feedback from guests and bar personnel to assistant beverage manager. Follow-up on complaints and negative feedback.Check all bar staff and make sure they report on time, follow the daily instructions giving by the beverage manager and ensure the bar team follow up on company standards and procedures.
