What is a Senior chef de partie, a chef de partie can also be known as a section/station chef or a line cook. The chef de partie will be in charge of a particular section within the restaurants kitchen. In the larger establishments with busier kitchens the chef de partie may have an assistant (demi chef de partie) or a couple of assistants.However, in most kitchens the chef de partie will be running a section on his/her own. Chef de partie’s are often divided into an experience level with the levels being: Demi chef de partie, chef de partie and a senior chef de partie.

Since the Demi chef is responsible for all dishes prepared in his section, he must be knowledgeable about the section he oversees as well as how a kitchen functions as a whole. Being organized and able to work in fast-paced, high pressure situations is important. In the kitchen, the Demi chef oversees line or station cooks within a production area -- such as the portage, saucier, vegetable cook or pastry chef.
