The PhD study aimed at the characterization of sourdough ecosystems using both cultivation-based and culture-independent methods. The thesis focuses on the diversity and population dynamics of lactic acid bacteria in artisan Belgian sourdoughs and sourdough fermentation performed at laboratory scale.
