I was hired to formulate a new wine director role and make changes to the two restaurants' respective wine programs that brought a fresh approach while maintaining their Michelin-starred style, and creating an invigorated staff education and service standards program.

-Oversaw all aspects of Perbacco’s extensive wine program, maintaining 700+ selections, cultivating a prestigious yet accessible list with diversity, rarities, and breadth of vintages. -Worked regularly with the culinary team to create tasting menus with wine pairings for events from intimate and lavish to large and streamlined as well as worked with guests and private party planners to orchestrate events and guide wine pairings and presentations. -Worked closely with the PR team to cultivate and expand the restaurant's image in social media and the press, as well as created and led promotions, events, and community work, and represented the restaurant at fundraiser auctions, such as Meals on Wheels and Dress for Success. -Developed staff wine training program, held regular education classes, as well as trained and maintained all server staff in their knowledge and service standards.

I created many tactics to upsell including starting a magnum program and a new role as a liaison with all private parties and buyouts to upsell and personalize guest experience. -Made weekly wine pairings for the Sunday Supper tasting menus.-Worked the floor during lunch and dinner service, oversaw staff and offered wine selections, including maintaining in-depth knowledge of Michelin three star sister restaurant Quince’s extremely extensive international wine list which accounted for a large quantity of my sales.

Created and maintained an extensive wine education log, arranged staff tastings, seminars with local producers and importers, as well as did daily education to keep everyone up to date on the rotating list of forty plus dry wines, twenty plus sweet wines, and bevy of beer and aperitivi available nightly by the glass. -Created wine pairings to showcase the list and compliment the cuisine for tasting menus, private parties and special events. Also hosted frequent wine dinners and industry tastings.-Worked the floor nightly, helping guests navigate the list to find their ideal wine selection.
