In charge of procedures for extraction and chemical analysis to determine the thermal stability and proteolytic enzymatic activity of Bromelain, extracted from the peel and stem of Ananas comosus l. merril, or commercial pineapple. The peel and the stem of the pineapple are residues of the food industry. Such parts, rich in this proteolytic enzyme of considerable industrial and pharmaceutical interest, could be used for the extraction and subsequent purification of this component.
