I am a research professor at the Institute for Obesity Research at Tecnologico de Monterrey, based in Guadalajara, Mexico. With over 5 years of experience in food science, food technology and processing, nutrition, and biochemistry, I am currently dedicated to the design of healthy food products. My work focuses on the techno-functional and biological properties of these products, targeting metabolic diseases such as obesity, inflammation, and cancer.My expertise includes the physicochemical analysis of dairy products and the corn industry, validation of sanitation procedures, Good Manufacturing Practices (GMP), control and management of pests, and target tracking.
