Chateau Marlborough is Blenheim's only 5 star hotel so it was my role to help maintain and uphold this 5 star level of service in the food and beverage department. I assisted the GM & head chef devise new menu's and helped make sure service ran as smoothly as possible. I was happy to jump behind the bar when necessary and helped improve the level of barista coffee making within the team.

I undertook a variety of positions working with Allan Scott family winemakers. These included working on the vineyard preparing the vines for the upcoming season and helping to pick grapes during the harvesting process. I also experienced time in the winery increasing my knowledge as to how wine is made once grapes have been harvested. Predominantly i was based in the restaurant and cellar door though and performed a variety of tasks including promoting and selling our final product alongside serving and assisting the general manager in the vineyard restaurant.

I managed the cafe at rainbow ski field during the winter season. This was a great experience working in a beautiful location making sure the cafe was set up regardless of the conditions and challenges we faced working at altitude. Stock ordering was a crucial element of the role making sure we had the right balance of food and beverage to make sure we wouldn't run out of items but at the sametime reducing wastage to make sure the business was run as profitably as possible.

Responsibilities included promoting and marketing the restaurant with themed evenings such as gin tastings and steak nights which has increased trade. I am currently setting up a database to publicise these events further. Duty manager tasks include being solely responsible for the successful running of the restaurant including dealing with any complaints and ensuring standards are being maintained both in the kitchen and on the restaurant floor.

This is a high quality restaurant located just off manly beach serving fresh local seafood and quality eating steaks. I began as a waiter and after a couple of months received a promotion to become one of the restaurant managers. Even though my operations manager knew I could only work here for 6 months due to visa restrictions my enthusiasm and passion for the job prompted him to promote me.
