In charge of all Kitchen duties, independent role during the week, cooking high quality, modern breakfast and lunch to order. Baking sweet and savoury pastry’s for the cafe counter. Organising stock, ordering and costing. Invigorating new ideas and recipes for daily specials.

Second chef, I worked two split shifts a week. Was in charge of all starters and deserts presented to a high quality, modern standard during busy summer services, as well as extensive prep throughout the day. Learnt a new cuisine and expanded on my seafood preparation skills.

I composed and performed the soundtrack for a theatre piece, commissioned by the Berliner Festspiele. First performed in Berlin in the summer of 2016, we then toured the show in Italy, Latvia, France and London. This involved an intensive writing and rehearsal period followed by touring, and developing systems for technical theatre performance. The mixed media performance involved live viola, pre recorded electronic and acoustic music, as well as live looping. This was performed as a two man show, one actor and one musician (me), so required a fully autonomous role working closely with theatre technicians across multiple venues.
