Texas Sprouts is a 6-year research project funded by the National Institutes of Health, led by UT Nutrition professor Dr. Jaimie Davis. The project evaluated the impact of community gardening, farm-to-table cooking and nutrition education interventions on low-income minority elementary schools in the Austin Metropolitan Area. As a class assistant and member of the student research team, I helped build school gardens, led cooking demonstrations and nutrition lessons, measured student metabolic changes via blood tests, and gathered dietary self-reports from families.
