Focusing on the carcass dressing and how primal meat cuts can be affected/damaged in the abattoir and avoiding these damages. Recognised the importance of avoiding contamination on the carcass and ensured all measures were taken while enforcing policy on operatives to help comply with standards. Interacting with line operatives when necessary based on judgement or managers instructions.Boning Hall - Projects on looking at downtime and how to improve it, foreign bodies - where they come from and reducing them, time and motion using the data. Improving losses in the boning hall. Understanding different primal specs and supporting/covering supervisors when needed.Loading Bay: On floor management, organising throughput of approximately 2000 quarters a day (Italian cut). Splitting sides of beef to quarters ensuring maximum yields are attained and no damage to other cuts is achieved. Unloading of quarters monitoring quality control. Selection of ribs/loins/rump&loins etc for customers.
