•Ensuring operational and service checklists are completed thoroughly, with attention to detail focusing on service.•Work in marketing plans, strategies, themed events, and promotions, monitoring success briefing staff and ensuring compliance•Maintain an up to date knowledge of both trends within the food and drinks industry, and developments and best practices with the hospitality trade•Liaise with external suppliers as necessary•Be the point of contact for all corporate hospitality, promoting the use of facilities to outside users to increase revenue•Ensure that cashing up is carried out at the agreed times and banked in a timely manner, in accordance with financial procedures.•Proactively monitor sales, margins and expenses, and in identifying negative variance against budget, taking appropriate and timely remedial action•Actively support and work with the Entertainments & Marketing Manager to maximise and grow both food and drink operations

• Handle recruitment, training and all HR related matters• Plan, lead & motivate the team• Menu engineering• Ensure strict compliance of health & safety regulations• Monitor the quality of the products are served up to the standards• Handle all financial related needs ( budgeting, forecasting, target setting, payroll …)• Select appropriate suppliers and liaise with them• Monitor stock levels and refill supplies accordingly• Follow up on all customers’ feedback
