In 2005, I walked into an Applebee's hoping to be hired on as a dishwasher. The General Manager didn't think I would fit into their kitchen culture but saw potential in me. I was hired on to be a server, and thus began the journey that has become my life. I have worked in a variety of roles inside a restaurant, primarily I have worked on many diverse training teams, helping to train and implement the policy and procedures of the restaurant but also to teach about the culture of the team. If there is one thing, I've discovered over the years is that the culture of a team can make or break the restaurant. In 2020, I stepped away from being an hourly manager and lead trainer to pursuing a career. I started working the Table Mesa Inc, again as a server, but in a period of nine months I was able to grow within the company to being a General Manager. At Table Mesa Bistro, the management team was able to take a successful restaurant to the next level. We were averaging weekly sales of $60,000 with a fluctuating staff. In the next six months, we re-designed the training curriculum, began to focus on key opportunities within the restaurant, and promoted floor leaders. After which we had increased our sales to $90,000 weekly, and developed a core staff, many of whom are still there today. After my promotion to General Manager, again, working with the team of managers in place, we were able to devise a plan to alleviate overtime, reduce spending, and build an identity with the front of house team. When I began that journey the restaurant had averaged $25,000 a week in sales, and as of today they are still consistently hitting $40,000 a week in sales. Much of the succuss I've experienced has been due to the team around me, taking the time to take an honest evaluation of needful changes as well as what shouldn't change, developing a plan, and following the plan. I take the time needed to know and understand the menu, the policies and procedures, as well as the culture. I am great at taking care of the guest, and conflict resolution as I've learned how to actively listen and stay calm in intense situations. I hope to take my experience, my passions, and apply it to the next opportunity I receive.
