As Production Manager, I have been part of the team overseeing the Williamsburg facility of the Brooklyn Brewery. My main duties have included forecasting needs for and ordering ingredients, writing yearly contracts for malt, maintaining Standard Operating Procedures, developing our fantastic brewing team, writing weekly plans, analyzing quality data, and recipe development. We have expanded the operations during this time from a little over 20,000 bbl to over 60,000 bbl and plan to continue this growth further. I have added to my knowledge of brewing science and new beer styles, diving into sour beers and barrel aging, and have been proud to be part of such a fantastic team and organization.

Was in charge of daily operations at a 3.8 mhL brewery. Responsibilities included monitoring the brewhouse, fermentations & maturations, and filtration of the beer; dissemination of information to department heads as well as regional planners; led of multiple projects designed to improve brewery efficiency and safety; personnel management of a dozen operators; problem solving and crisis management were a major part of my work.In broader terms, I was there to ensure the consistency and quality of the highly respected Heineken UK beers on a brew-by-brew basis.

Royal Mile Whiskies is one of the most respected and renown whisky retail outlets in the world, with one of the largest selections of Scotch Whisky in the world, as well as one of the largest rum selections in the U.K. While employed here my main responsibility was to sell whisky to regular customers and tourists visiting Edinburgh from all over the world. Listening to customers wants/needs and selecting a whisky that would suit them or a loved one was the most common aspect of the job. Furthermore, window display design was a regular feature, usually done as a group, negotiating selections, but sometimes individually. Lastly, I also helped select a variety of bottled Real Ales to supply in order to increase customers and to improve quality of Scottish alcoholic products.

I worked on a Student Placement at the Royal Brewery in Manchester for 8 weeks over the summer of 2009, a 3.8 mhL brewery that has been tapped as one of three strategic sites in the Heineken take-over, finalised in December 2009. While there, I was put in charge of a project to increase the viability of the filtration process in the Spare Beer Department. The project was very successful in optimising a number of aspects of the plate filter including filter-aid regimes, pump usage and flow-rates, and standardisation of the operating procedure to ensure future viability. Lastly, another project I was charged with towards the end of my placement was to make a volumetric flow-chart of every stage of the brewery from Fermentation through Filtration based on real-world numbers. This was key in discerning where changes within the brewery were to be made in the case of increased production (an inevitability as this placement was 3 months before Scottish & Newcastle became Heineken U.K.) and also to see where any problem areas may lie in terms of origins of back-ups and bottlenecks within the brewery.
