I am currently Lead Brewer at Brick Brewery in Deptford. Working as part of a small team, my role involves all aspects of wort production, cellaring, and packaging into keg, can and cask. I have been with the company during the transition from a fully manual, gas fired 30hL brewhouse to a semi-automatic 60hL steam fired kit, and worked closely with the Head Brewer and Gravity systems to plan and design the new kit and get it installed and up and running smoothly. I have been responsible for designing the recipes for many highly rated beers, including Brick's popular range of kettle sours. I am fully trained in operation of a GEA "Plug and Win"50 centrifuge, as well as lab equipment for management of fermenting beer. I am HACCP lead at the brewery, and implemented a HACCP plan as part of our successful bid for SALSA approval. I have represented the brewery in a public facing role, at events and beer festivals as well as on camera for social media.
