In 2015, while still in college, I developed the concept for a healthy food truck. The food truck industry was booming, yet there were no choices for health-conscious consumers. This venture helped me to learn basic accounting, finance, and web design used to run a business. Over the next 18 months, while working with various government agencies and municipalities, I brought Clean Eats from dream to reality – including the design and purchase of what would become one of the most recognizable food trucks in Utah. In only one year of operation, Clean Eats had gross sales of over $150,000. Clean Eats and the hyper-competitive food truck industry provided a breadth of knowledge and experience that would have been otherwise impossible in two years
