-Management of teams ranging from 5-10 persons. These teams would accompany me on music festival circuits across the United States cooking, setting up remote kitchens, preparing food, servicing the patrons of the music festivals and running basic equipment set up/upkeep.-Training new, event only and ongoing employees on the proper food safety regulations and standards, preparation, set up of equipment (including running gas lines, setting up kitchen equipment like stoves and fryers,etc.), driving safety procedures as well as individualized training specific to cooking in outdoor facilities.-Project delegation and management over every facet of making a food truck/ outdoor cooking facility operable to serve up to 40,000 in food sales a day.- Equipment and food delivery along with servicing the trucks. Trained extensively in safe/defensive driving, punctual commuting, packing and organizing a truck and trailer to complete operations in a built on site kitchen for upwards of 7 days including proper food storage and preservation.-Projecting food margins and executing food preparations to operate not only an offsite kitchen for upwards of 7 days but also for the restaurant, catering service, other food trucks in our fleet, brewery and weddings.
