I love science and I love making wine. In my opinion, they are one and the same. For me, the allure of wine is in the complex flavors, science, history, and culture that make wine what it is today. Running a winery is a lot like running a lab. All of the conditions must fall into a degree of accuracy to ensure a worthy product. So many factors can change the properties of the finished wine. A winery is also great place to exercise creativity. At Raven Hollow, I've bottled and sold 15 different wines, most of them in small batches. My best seller is Strawberry Rhubarb, a combination that makes most people think of pie, not wine. But you never know until you try. You can make wine out of almost any fruit. 99% of the ingredients in my wines are composed of the fruit on the label, sugar (to get the alcohol content up to wine strength), and water. I don't make my fruit wines with a grape wine base. Also, I don't over sweeten. Many might equate fruit wine with sweet desert wine. It doesn't have to be that way. You can sweeten most fruit wines as much, or as little, as you wish. We're also proud supporters of local agriculture. The majority of the fruit used for our fruit wines is grown by the farm next door.
