I’m the proud founder of The Craft Irish Whiskey Co.We’re the first and only rare and collectible Irish whiskey company to cask at 52% ABV. The Craft Irish Whiskey Co. creates limited “Rare Release” craft whiskeys. Each release is numbered and highly collectible. I became a whiskey advocate after reading a book called Truths about Whisky, which was originally published in 1879. It explained how the liberties in Dublin (where I was born) was the epicentre of global whiskey. Dublin whiskey was known as the ‘gold standard’ spirit at the time. The ‘Champagne’ of sparkling wine, so to speak.I studied the history of Irish whiskey and learned that it had declined in popularity since the 1920s. Fast forward to today, In every high-end restaurant around the world, you’d be lucky to see one or two Irish whiskeys on a menu with up to 45 Scottish and at least eight American whiskies.Seeing this set me on a mission to create and promote the luxury and craft side of Irish whiskey.
