It started off as a recurring late-night chat with a bunch of other whisky lovers at our whisky social events, became something we started to take seriously. Why wasn’t China conquering the world of western style spirits in the same way it was with pretty much every other industry? We couldn’t find any reason other than - someone needs to start the proverbial ball rolling.That was in 2016 and since then a number of distilleries have started production and some of the big brands have thrown their hat into the ring with some carefully worded PR announcements. So there are no claims from us to be the first, or the biggest, or the best. We have our own vision and we’ll stick to that.We’re hoping to break ground in Q4 2021, then after excavating, laying foundations, erecting steel frame, concrete pours, block work, and then 1.3 million bricks to make up the facade across the 4 buildings that will make up our 20’000 square meters of production area.We don’t have any creative claims for hundreds of millions of dollars as a budget. We don’t any bragging rights on having so little distilling hardware that it can all be packed into a few shipping containers and moved halfway across the world. What we do have is 130 whisky lovers, pooling their money, their time and their passion into bringing to life a distillery that will craft whiskies how we think they should be crafted, to styles and expressions that we personally enjoy, and bring them to market at prices we think are fair.We’re doing that while showing responsibility to the beautiful, natural environment of Fujian Province by minimising both waste and energy consumption. We harvest energy from the air using air source heat pumps, which is used to preheat everything we work with. We have then massively reduced the energy required for distillation with our patented still design.
