Oversee the total operations of the Food Service Department for the Williamsport Area School District. This includes 10 school locations that feed over 5,500 students daily. Since arriving have increased participation by over 10% and have decreased food cost by over $100,000 per annum. I have implemented a Universal Free Breakfast Program that provides free breakfast to all students in the district as well as researching and implementing a Free Dinner Program that feeds all students at the Secondary level who participate in approved after school activities. Over the course of the first 12 months, performed a massive IT infrastructure upgrade, including the POS terminals, software, inventory management system, payroll procedures, and Free/Reduced meal application processing system. Currently serving over 3,500 lunches and 2,500 breakfasts daily along with several thousand dollars of internal catering each month.

Harrisburg, Pa

Took over a failed restaurant location and rehabilitated the store. Store had negative cash flow for 18 months prior to arrival (over $60,000) and was turning profit within four months. Ran the lowest food cost in the company for seven straight months by a 2% margin and was turned into a manager training store within 3 months of arrival. Arranged off site catering engagements for groups as large as 100 guests. In addition to day to day and long term operations, arranged major on and offsite events including charity golf tournaments, swim suit contests, weekly poker tournaments and other events that built brand awareness and guest basis. Worked in collaboration with local radio personalities and representatives as well as vendors from local distributors on food drives, toy drives, car shows, event promotions, off site contests, and charity events to benefit the local Red Cross. Worked closely with sales vendors to develop product promotions and endorsements and negotiating contract pricing for products.

As Compliance Manager, worked to ensure loss prevention and security policy adherence at 14 locations. Designed Excel based loss prevention report and worked with middleware to evaluate store discount and sales data to determine abuses. Used Video over IP surveillance system to monitor and report on inappropriate activity. Served as secondary IT support for managers and directors when MIS was unavailable or multiple problems occurred simultaneously. As General Manager, oversaw a single-unit Red Robin Restaurant with an annual volume of approximately $3.5 Million with full P&L responsibilities. Directly responsible for the leadership of a management team of six people overseeing a crew with over 100 team members. Responsibilities include: hire, fire, and train staff; review profit-and-loss statements; inventory; monitor cash compliance; write crew & manager schedules, generate new business and revenue through aggressive local store marking; inspire and motivate teams; evaluate and provide reviews for managers and hourly team members; build sales; and cut costs. Created system for tracking local store marketing that provided ROI data to asses the success of program. Redesigned Excel based data base that tracked labor and productivity reducing almost 20 man hour’s work per store each week and substantial improving readability and user ease. Created Excel production sheets, reducing weekly work by 8 man hours and waste by 35% at each of our 14 location.

Oversaw a district of seven Cinnabon Bakeries and nine Sweet Factory Locations. Designed and coded new company paperwork system that was implemented in 116 bakeries to reduce operator error and increase productivity. Coded and designed Excel based field P&L being used company wide by 14 Multi-Unit Managers and two regional Directors. Directly managed between 40-60 employees. Responsibilities include: hire, fire, and train managers and staff; write sales and cost plans; review profit-and-loss statements; inspire and motivate management team; build sales; and cut costs. Develop local marketing and specials to combat seasonal and temporal sales variances. Arranged manager development seminars from start to finish including facilities, catering, equipment, presentation topics, & lecturers. Also responsible for interacting with mall managers regarding leasing arrangements, and mall marketing managers to find opportunities to increase sales and brand awareness. As part of a special team examining direct operating costs and cost of goods sold, initiated company wide change in milk distribution companies that resulted in a 200,000 dollar savings per annum.
