About Jeffrey Root
My experience has been very diverse but nothing short of fulfilling. My family has been in foodservice for over 80 years. In 1971 my grandfather Jerry Bernardi, along with my uncle Dick Bernardi, founded Bernardi Italian Foods in Toluca, IL, which ultimately grew to be the largest manufacturer of frozen pasta in the United States. I spent nearly 3 years in Italy in the 90's working in Bologna along side chef Vincenzo Vottero at Ristorante Panoramica focusing on fresh pasta manufacturing, meat fabrication as well as at my family's bed/breakfast in Gaggio Montano (home of Saeco Espresso Machines). I also worked as an interpreter for Costruzione Macchine Marconi in Silla, Italy. I left the food industry in 2001 to pursue graduate studies at Florida State University and at the University of Wisconsin-Madison. I spent 5 years as adjunct faculty between Arizona State University, Florida State University and the University of Wisconsin teaching Italian language and literature courses as well as obtaining my Master's Degree from Florida State University and completing all coursework for a doctoral degree from the University of Wisconsin.Skill set includes: Italian cuisine / culture / language, menu planning, menu creation, food cost analysis, operational consulting, managing broker/broad line distributor relationships, customer service implementation, end user training, product training and server staff training, sales strategy, marketing strategy, and brand enhancement strategy.In June 2019 I was awarded the title of Official US Ambassador of Bolognese Cuisine by ASCOM Confcommercio di Bologna - arguably the most humbling moment of my professional career.I now proudly lead Brand Development for Pasta Armando North America for De Matteis Corporation.
