After the COVID hiatus, I came back on board to Twenty Five Lusk where I was promoted to General Manager and Beverage Director. Duties included developing COVID related training, hiring and onboarding, day to day management of private events and indoor dining, beverage inventory management, menu design and formatting, cost monitoring, and the curation of wine lists on multiple levels.

Che Fico Alimentari is an extension of the critically acclaimed restaurant Che Fico with a focus on traditional Roman fare with an almost exclusively Italian wine list of over 200 bottles. I was the acting manager as well as sommelier on the floor nightly. I was involved in daily education and implementing structure throughout the shift in addition to participating in inventory and the daily financial balancing of the vault. I thoroughly enjoyed my time at CFA but unfortunately was furloughed in March of 2020 due to the COVID pandemic.

Twenty Five Lusk is a two level fine dining restaurant with our lounge and private dining room located on the basement level and our dining room located on the second floor. I managed both levels but my technical title was the bar and lounge manager and assistant sommelier. Duties included monthly inventory for both wine (450+ bottle list) and liquor, weekly ordering, ongoing education with staff, scheduling, assisting the lead bartender with the creation of seasonal cocktails, and managing the dining room. We have also garnered awards from Esquire Magazine for Restaurant Design 2011 and Best New Restaurant 2011.

Il Mulino is located in Caesar's Palace and my role there was multidimensional. I had just moved from NYC to Vegas and Il Mulino gave me the opportunity to bartend for the first time in a fine dining restaurant as well as act as maitre d at the door. While there, I created a variety of specialty cocktails in addition to spirits and wine in a Northern Italian fine dining setting as well as seating guests and taking reservations.
