CurrentI have been promoted to Food & Beverage Manager at Lakewood! I am overseeing Cascades, the restaurant, Currents, our bar and lounge, Express, our dinner buffet, and our pizza concept, PAV. I have ~60 direct reports and am responsible for their training and development. I worked at a restaurant in the Marriott called Fall Line. I was employed before the restaurant physically opened and got to see first-hand all the hard work that goes into opening a new restaurant! The menu focused on upscale casual American Southern food. I worked as a server and occasionally hosted as well. I took tables in the main dining room, the patio, our seasonal igloos/gazebos, and worked events in our Private Dining Room. I acknowledged guests within 15 feet with a smile and verbally greeted anyone within 5 feet. I did this not only in the restaurant, but also as I walked throughout the hotel, even if I was on break or on the way to the bathroom. Customer service and hospitality were of utmost importance in this role, as well as time management and organizational skills. Before greeting my customers at the table, I checked with the host to see if they were celebrating anything to see if there is anything special I could do for them. For example, if they were celebrating their anniversary, we provided complimentary glasses of champagne! At the table, I welcomed them to Fall Line and offered a tour of the menu. I then asked about and delivered their water preference, then inquired about other drinks. I learned the proper technique to pour wine, as well as other food and beverage knowledge such as wine pairings and meat temperatures. I took appetizer and entree orders and coursed them, making sure to check in after 2 bites or 2 minutes of each dish being delivered. Then I brought dessert and the check. I prebussed the table as much as possible during service, always using an open hand and body to deliver or remove items from the table. When the table got up, I would buss and reset. I would have up to 6 tables at once, sometimes more during breakfast or lunch if I was the only server. In between taking orders, I would run food, assist the host with seating, and check in with my teammates.
