Food Safety

We provide 6000 meals per day to 3400 children at our 46 child care centers and private organizations in the Bay Area. Our Nutrition Department makes every bite count, and we strive to nourish growing bodies and minds. Without good nutrition, children can't develop to their full potential, and have a tough time making good decisions. With childhood obesity and diabetes reaching epidemic proportions, it's time we teach our children what real food is, and it doesn't come in a fast food or Hot Cheetos wrapper. We make our food with love, and use real ingredients that actually have nutritional value, such as brown rice, whole grain pasta, and homemade soups and lunches. We care for children from many countries, and we've developed menu items that reflect our incredible ethnic diversity, such as Curry Chicken with Tandoori Naan, Pancit with Chicken and Snow Peas, Ground Turkey Sloppy Joes, and my O-town favorite, Carol's Chicken and Waffles. We participate in the Child and Adult Food Program, so we serve children fruit, vegetables, a starch and protein and milk at lunch, a whole grain starch (such as Whole Grain Waffle sticks from Van's) and fruit for breakfast, and a wholesome snack (usually fresh fruit or real cheese and whole grain crackers). Every child has the right to nutritious food so they can get the building blocks they need for proper brain development, physical development, and to learn healthy eating habits so they won't be another diabetes or heart disease statistic.

Specializing in developing individual diet and exercise programs to help reduce the risk of or recover from chronic disease, manage weight, increase energy levels, reduce stress and enjoy life to its fullest.

Supervised operations of six retail fuel/convenience stores in Northern California. Perform all personnel management activities including recruitment, training, hiring, termination, scheduling, periodic reviews, promotions and salary adjustments. Oversee product inventory, implement marketing plans, ensure day to day operations follow Nella procedures, budget compliance, and provide exemplary customer service. Maintain compliance with EPA, state and local regulations.

Ernie's is a $60 million corporation providing cardlock services and full service truck stops in Washington. As Operations Manager for the fuel stops, I developed comprehensive training for managers and staff of 40, implemented back office software to track inventory and provide cost and retail pricing control, increased convenience store sales from 25% to 44%, negotiated with vendors for products and pricing, maintained, repaired and installed computer and point-of-sale equipment.

Program manager for two non-profit organizations, California-Asia Business Council (CalAsia) and Customs Brokers and Forwarders Association of Northern California (CBFANC). Developed business ties between California and Southeast Asian and Chinese companies. Managed member database, increased membership, processed dues, coordinated fund raising events (annual "Asia Night" in San Francisco), set up and coordinated venues for meetings and events.

Managed on-site waste remediation projects including lab packs, DRMO and DOD contracts, soil remediation, Superfund sites, explosives deactivation, unknown characterization. Classified all waste streams according to EPA and DOT regulations, prepared manifests. Managed Benicia TSD and household hazardous waste events.

Recruited to design a chemical and waste stream database. Hired and managed a staff of 4 to catalog chemicals and waste streams, as well as to build customer health and safety plans, bid on projects, and categorize and dispose of waste. Leveraged alternative waste destruction methods to reduce customer expenses. Managed major DOD, DOE, and DRMO contracts in addition to private sector accounts. Selected to open a new office in the San Francisco Bay area.

Worked both in the field and in a laboratory environment to design and implement customized, compliant waste management plans. Created the UPac system to classify, properly package and manifest waste streams at customer sites, a solution so successful that it is still in use. Supervised a team of 4 researching and cataloging 20K chemicals and waste streams.
