Managed the health of up to 5 house yeast strains at time. Taking cell counts of slurry at harvest and at pitch, hour 0, hour 24, hour 48 and hour 72. I checked for viability, and tracked pitch rates, making adjustments to pitch rates based on fermentation data. Propagated yeast from a single cell to ensure fresh yeast pitches for some of our highest selling beer.Used aseptic methods to collect sterile beer and sort samples. Plated samples to check for microbiological health. Tracked fermentation data and trends by creating pivot tables in google sheets for every fermentation, comparing batches, and improving fermentations along the way. Communicated meaningful observations with the brew team to discuss possible changes or improvements based on data trends. Became well versed in Anton Paar’s C-box, PFD Filler and DMA35. Using the C-box and PFD Filler for dissolved oxygen checks on all canning runs. Led sensory experiences, using true to brand, true to style, triad and tetrad tests. Some were blind and independent while others were open to collaborative discussion. I revisited sensory tasting norms, a common sensory lexicon, eliminating bias and style guidelines with our team frequently.
