Product developer, trend analist, teacher and culinary pragmatist, Chef Jon Middleton embodies a unique combination of resourcefulness and creativity. His versatility makes him equally adept at planning major events for thousands, developing branded concept restaurants, preparing a hands-on demonstration for twenty or an intimate dinner for six on his farm.His peers and employees know him for his passion and deep respect for food and the food industry as a whole. Prior to establishing Whetstone Culinary Development™, Jon spent twelve years as the corporate executive chef and director of culinary research and brand development for The Wood Company and Sodexho.During that time, Jon was the lead culinary voice in the development of the company’s portfolio of eight proprietary retail brands including Jazzman’s Café and Pandini’s, both named Hot Concepts Award Winners by Nation’s Restaurant News. Jon is the creator of the Labretti™ sandwich, a menu staple for Pandini’s and developed the standard for the often imitated, but never duplicated Jazzman’s muffin.Since 2002, Jon has been at the helm of Whetstone Culinary Development™; a consulting firm that allows him to fully utilize his multiple talents. He continues to do development and food styling for Sodexo and has worked with Alderfer’s Meats, the Peanut Advisory Board, Campbell’s Soup, the California Avocado Commission, the National Pork Board, Ocean Spray, the Idaho Potato Commission, Rich’s, Tyson Chicken, the Florida Department of Citrus, General Mills, and Nestle USA. In 2004, Jon formed We3Chefs.com, a company that manufactures his creation; The Original Food Lover’s Trivia™ game available at Barnes & Noble and other retailers.Jon is quite proud of the fact that he has always used local, seasonal, sustainable and natural ingredients in his restaurants since the late 70's.
