Edible insects are the food of the future. They are sustainable, healthy, and they taste great. At Bugging Denmark and Syngja our mission is to gently introduce edible insects as an integral part of our culinary and cultural everyday life. At Syngja we are introducing consumers to edible insects by integrating the insects into one of the most widespread (and loved) food commodities: Beverages. At Bugging Denmark, the country's first (and so far only) urban cricket farm, we wish to empower communities to take the challenges of sustainable development into their own hands. Through The Urban Ecosystem, we are optimising Insect farming to an urban environment by using the many hidden resources of the city to power insect rearing. As such, the waste products of beer and juice production are now being used as feed on our farm.Edible insects pique our curiosity and stimulate our creativity, both in the kitchen and outside. As a novel contribution to our society, they force us to reconsider what constitutes food and therefore challenge long-standing dogmas. They are a source of social as well as environmental sustainability.Our mission is to turn insects truly edible. It is the future of food. Now.
