Successfully managed the opening of another 4 Fire & Stone restaurants across the UK.Was responsible for the 5 sites, in all areas from sales and profit delivery, recruitment and staff retention, staff training, service and standards delivery, quality controls for food and beverage and all aspects of compliance. Budgets were met in each site, staff turnover reduced significantly and resulted in a dynamic and passionate team driving the vision and values of the Brand. Succession plans were met through introducing the Stepping Stones program to the company that provided a career pathway for many employees.

Headed up the largest restaurant in the CG Restaurant group in London. A passion for and strong focus on team building led to record breaking figures for the company and double digit sales and profit growth were achieved every year. The 250 cover restaurant grew to deliver well over 5000 covers per week.
