CWTCH facilitated my goals in expanding my speciality coffee knowledge and becoming an AST trainer. Although my role was Head Barista and Trainer, I have found myself being engaged in other facets of the business, which are usually associated with more senior roles. I feel this is due to being self-driven, openly suggesting ideas to the owner to develop the business and being able to work in a flexible fashion. Some of my initiatives and responsibilities are:Training Initiatives: -Training and auditing staff members to Speciality Coffee Association of Europe guidelines.-Training staff for readiness of operating at a newly opened site.-Setting and organising SCAE courses for myself and my staff.-Teaching practical skills such as brewing/cupping protocol and sensory science.-Organising, creating and teaching Coffee Masterclasses for customers.-Creating company specific training manuals, recipes, educational handouts and exams.Head Barista Responsibilities:-Ensuring my team produced coffee to high standards consistently.-Ensuring smooth operation during morning rush hour of 300-400 coffees.-Researched, designed and produced a selection of drinks for our seasonal menu.-Direct point of contact with roastery and engineers.-Basic level of engineering to maintain equipment such as grinders and espresso machines.Head of Drinks Responsibilities:-Setting and achieving a sales target of 100,000 drinks in 2016.-Project managing the build and opening of a new site which included liaising with carpenters and designers, sourcing new products, overseeing the install of the coffee bar and equipment, promotion and marketing to increase awareness of the new site.-Social Media Manager for Instagram and Customer Support for mobile app.-Executing promotional media campaigns, e.g. making coffee from different countries around the world and recording customers reactions for our social media channels.

I've offered my services at corporate events, weddings, markets and charity events through partnering with different companies in the UK. This has enabled me to interact with a huge variety of clientele and given me the opportunity to tailor my approach in a personal yet professional way. Some of the highlights through this opportunity have been:-Meeting and serving the CEOs of influential companies in their respective fields, including Costa Coffee, Burberry and British Airways.- Learning the art of assembly and setup of a mobile cafe, and the plumbing, safety and electrical requirements that come with it.-Devising and running masterclasses for other Baristas.

For the opening of a new London Coffee house focusing on delivering a personal speciality coffee experience. As well as being a barista, my responsibilities as partner included:-Product research, attending trade shows and advising on equipment procurement.-Visual communication strategy, pricing, menu design, product placement and store layout to maximise use of workspace.-Creating training procedures and guidelines to ensure consistency and quality for the brand.-Performing internal audits on equipment and staff competency.-Training staff on use of Revel till system.

From having no experience as a Barista to becoming Head Barista, the National Theatre was where I discovered my passion for speciality coffee. The development opportunities here included:Head Barista:-Organising the workflow of the team to be efficient in serving over 2000 coffees a day during peak periods.-Delivering a programme of continuous training for both new and existing staff. -Meeting with our equipment and coffee supplier, to discuss techniques, product knowledge and recent audits.-Responsibility for introducing a new experimental drinks menu for our evening trade.-Being persuaded to represent the National Theatre in a latte art competition at the London Coffee Festival and being placed first.Supervisor:-Ordering stock, managing breaks and cash up at the end of a shift.-Achieving target based weekly sales.-Ordering new equipment and maintenance of existing equipment.

Identity Drama School was a step I took to understand my passion for creativity. I have personally understood acting as the observation of others, which gives insight into the way people experience their life and a greater appreciation for how one responds and reacts to everything around us. There are many ways a group of workmates and a group of actors are similar, they can be engaged and trained with parallel techniques to assist workplace development and relationships. I feel it has given me a sensitivity to recognise the differences in clientele, when to involve those in your world or be absorbed in theirs.
