We recently launched a new range of sourdoughs which I developed from scratch and was project-lead. I led a team of managers and implemented traceability across the bakery which joined up with other departments. The system took into account all aspects of production and fed onto the night shift traceability. Which I also designed and implemented. I led a team of bakers and produced baked goods for leading supermarkets, pub groups, coffee shops and transport companies. I was responsible for production all the way through to dispatch.
