T'ai Chi Chih is a meditative practice consisting of 19 gentle moves and one pose. The movements are easy to learn from an accredited instructor. This practice offers its students a healthier mind, body and spirit through an inner discipline that focuses on circulating and balancing the body's natural energy. Reported benefits include reduced stress, strengthened immune system, weight and blood pressure control, better balance and flexibility. It is a beautiful practice to incorporate as an integrative therapy for anyone at any age. The principles of softness, letting go and being in the present moment are emphasized as the movements are taught. With awareness, students chose to adapt these principles of movement to their everyday life discovering peace and softness as a tension-free way to live. My students have been taught in public, private and home settings including the Town of Windsor Art and Heritage Center, the Town of Windsor Recreation Center, New Belgium Brewery- Fort Collins, Clearview Library - Windsor, Zac Elementary School - Fort Collins and Good Samaritan Society of Water Valley. Food Safety Consultant for Independent Care Facilities in the Denver Colorado area. Emphasis is focused on safe preparation of meals for residents and evaluation of compliance for meal service including proper diet, appropriate adaptive equipment and respect for residents' preferences. In addition, monthly food safety and cooking classes are taught to care providers.

Conducted greater than 3100 hours of on-site quality assurance evaluations for contracted clients in the restaurant and hospitality industry based on specific criteria related to food safety, work place safety, brand standards and customer experience, including on-site mystery shopping. Immediate feedback on cited issues and coaching on standards was routinely provided during the evaluation, as well as, on-site training and off-site training on food safety and brand standards when requested by the client.

Recruited, scheduled and conducted greater than 100 group and individual educational sessions on basic nutrition, budgeting and food safety, as well as, in-services to community social service program directors to increase client referrals. Taught weekly cooking classes to food pantry visitors in a professionally designed demonstration kitchen. Taught the nutrition curriculum titled "Professor Popcorn" to multiple after school programs in the county: Taylorsville, Lincoln and Richards Elementary Schools.

Provided nutrition consultation for patients and their families. Collaborated with the interdisciplinary group and attending physician.

Coordinated the planning, training and assessment of and conducted exercises for public health preparedness activities for the county health department and community partners. Completed environmental and enteric communicable disease investigation for specific reportable diseases involving Bartholomew County residents. Fulfilled the Indiana State Department of Health Public Health Preparedness and Emergency Response Grant requirements for two separate years: 2006-2007 and 2007-2008, including monthly community meetings for pandemic influenza planning, crisis communication drills, community outreach education programs on pandemic influenza and emergency preparedness and financial management of the grant.

Maintained the grounds of the Hamilton Gardens, a private landscape designed by Dan Kiley, under the guidance of the historic property's manager, Art Hopkins, a local landscape architect.

Administrated all aspects of the Jennings County Special Supplemental Nutrition Program for Women, Infants and Children (WIC), including nutrition education and breastfeeding promotion. Served as an Indiana State Department of Health trainer for the local breastfeeding peer counselors, as well as, a member of the following committees: Jennings County Step-Ahead, First Steps Council, Jennings County Health Task Force and the Indiana State Board of Health Breast-feeding Committee.

Developed and implemented the nutrition education program, nutrition policies for the clinics, and staff in-services related to nutrition. Completed screening and nutrition assessments for applicants, as well as, referrals, high-risk counseling, smoking cessation education and nutrition education for participants. Served on the Indiana State Board of Health Breast-feeding Committee. Collaborated on the development of the Local Program Breast-feeding Peer Counselor Training Manual.

Consulted with this small hospital on a weekly basis to ensure compliance with dietary practices, safe food production, and diet orders. Conducted patient nutrition assessments and nutrition education, as well as, dietary department inservices and community wellness education.
