• Overall responsibility of the concession – Three 5* Lodges, Workshops, Back of House and Solar Plants• Ensuring that the correct stock levels are implemented and maintained• Ensuring that all Daily, Weekly and Monthly scheduled vehicle and plant maintenance is completed on time• Setting up of Planned property Maintenance plans and ensuring that the correct contractors are informed• Ensuring that all Health and Safety Procedures are implemented and adhered to through daily, weekly and monthly audits• Hosting of all Government Officials & VIP Travel agents. Building a personal relationship to ensure future business.• Ensure that all Minimum standards are in place and adhered to• Community Relations with the Chiefs of the 5 local villages and ensuring an ongoing working relationship. Arranging and delivering of Food Parcels to the most needed during Covid Pandemic• Environmental Management of the Concession to ensure compliance with the Environmental Minimum Standards relating to Camps, Concession, Sewage and Solar Plants• Managing a team of 13 Managers to ensure that all monthly targets are met. Weekly meeting with the General Managers to address any issues and setting up plans to ensure the objectives are achieved• Monthly Financial reporting to Head Office covering all 3 lodges and concession• Driving Guest Satisfaction scores through continuous interaction and training of staff

• Hosting of Guests, VIP’s and Agents to ensure a personal relationship is built to ensure future business• Meeting and exceeding all guest expectations through ongoing training and product development• Setting up of ongoing training plans to ensure personal development of staff and management• Driving the Social Media footprint through actively submitting content• Ensuring that the welfare of all staff are well taken care of• Assisting the Management team in planning of weekly and Monthly orders

• Ensuring that all standards of food and Kitchen Hygiene is in place through regular checks and audits• Staff Recruitment and training to ensure all standards are kept to the highest• Weekly and Monthly planning of all Food, Drinks and Dry orders to ensure correct stock levels are in place to minimize wastage• Relief Management in the absence of the General Manager

• Daily running of the business• Ensuring that all stock controls are in place and adhered to through daily and weekly checks• Ensuring that the food quality is up to the required standards though daily checks• Working with the Chef with Menus development and Wine Menu pairings to ensure maximum profit margins are achieved• Setting up of service and standards training with the teams weekly to ensure that the quality of food and service is maintained to the highest standards

• Assisting the general Manager in the day-to-day operation of the business• Standing in for the for the General Manager in his absence• Networking with regular guests to ensure return and business growth• Daily, Weekly and Monthly Stock takes to ensure that all controls are in place and desired profits margins are met• Setting up of ongoing training schedules with the teams to ensure the most efficient operation

-Overseeing the Food & Beverage and Conferencing Department-Duty Manager and deputizing in the absence of the General Manager-Working with the Exec Chef to ensure the correct food and wine pairings are done daily-Financial reporting for the F&B & Conferencing departments-Staff recruitment and training
