Day to day duties as the Executive Sous Chef consisted of scheduling, payroll, quality assurance and performance management of 20+ employees. Duties also included ordering of product, inventory control, menu costing, budget, client, departmental and managerial meetingsWhile performing my duties as Executive Sous Chef I was also responsible for the maintenance of the Health and Safety Program. During this time I conducted committee meetings on a monthly basis as well as Health and Safety program audits for the Alberta Hotel Safety Association at this property and other hotels in Alberta with an average quality assurance rating of 91%.Under my supervision this property achieved 97% on the external health and safety audit conducted in 2009.
